Gravel – hand baked, small batch, locally sourced, organic granola
The project: Gravel was conceived of my desire to support local organic growers in my (then) home region of Western Australia, and create a truly crunchy, delicious breakfast which I couldn't find anywhere. Established as part of the NEIS program (which also earnt me a a Certificate II in Micro-Business Management), by the end of its first year in business, Gravel had gained a steady stream of dedicated customers as well as four regular retail stockists. Currently on hold while I relocate cities, Gravel is still able to be ordered as a custom order and will be up and running within the next six months, with local, organic ingredients from my new home city.
Over the course of the NEIS program and running Gravel for a year, as Owner/Baker I managed the recipe development, baking, packaging design and other graphic design, packaging and shipping, marketing, financial management and management of all other legal requirements (food health and safety permits, business licensing etc). The model for the business is deliberately small and flexible though, ensuring it can be quickly re-established wherever I set up home next, always seeking out the freshest, most local, organic produce to use in the recipes.
